Some evenings stay with you long after they end. The food was remarkable, certainly, but the food alone is not what you remember. You remember the moment a wine arrived, just as you wondered what could possibly come next. There is the way the conversation at your table shifted, quietly, into something more open and honest. And somewhere between the third and fourth course, you sense that someone has truly considered every detail.
This is what Stellenbosch dining at MERTIA sets out to create.
In the centre of Stellenbosch, MERTIA is a fine-dining restaurant built around one philosophy. A great meal should evolve alongside the people eating it. Every course is a deliberate progression. From the ingredients to the order of the wines, each detail serves that evolution.
The setting: where Stellenbosch dining begins before you sit down
The experience at MERTIA begins outside, at the antique gracht that separates the restaurant from De Wet Square. Crossing it is a small ritual, but it matters. That short crossing gives you a physical cue to leave the town’s pace behind. You arrive, properly, in the room that awaits you.
Inside, the dining room is intimate and carefully composed. The lighting is warm and considered. Tables sit far enough apart to allow conversation without isolation. And the atmosphere offers real welcome rather than performative formality. In fine dining, that is rarer than it should be.
For many guests, the setting alone shifts the mood. Stellenbosch dining at this level asks you to slow down. MERTIA makes that feel entirely natural.
Taste: a seasonal menu rooted in South African produce
At the heart of the MERTIA experience is a seasonal tasting menu. It changes to reflect what is freshest and best at each point in the year. Chef Matt van den Berg works with local, organic produce. Some of it comes from owner Marais Kirsten-Uys’s family farm in Klapmuts. The chef’s dishes draw on South African heritage and a broader, global culinary sensibility.
The current winter menu illustrates this beautifully. It opens with a Caesar Choux alongside Klapmuts Wheat and Cultured Butter. Next comes a Curried Mince Vetkoek with Coriander and Caraway. The centrepiece is a South African Wagyu course with an Assiette of Starches. The final act pairs a Karoo Pistachio and Rose dessert with Thelema Vin de Hel Muscat Late Harvest from Stellenbosch.
Each dish balances familiarity with surprise. Additionally, no two visits to MERTIA are identical, because the menu shifts with what the season and land provide. This is Stellenbosch dining at its most alive.
The wine pairing: a conversation in a glass
To experience MERTIA’s food without its wine pairings is to hear half of a conversation. The team does not simply select wines to complement the food. They choose each one to extend it, adding another dimension to the course. A good pairing opens up something in the dish you might not find on your own.
The current pairings include the Pilgrim Wines Viura from Goudini alongside the linefish and brandade. The Kleinood Tamboerskloof Syrah accompanies the wagyu. Every wine comes from a South African estate. Each one says something specific about the region and the season. For guests who choose the food and wine experience, this is where Stellenbosch dining becomes more than a meal.
South Africa’s wine industry ranks among the most celebrated in the world, and Stellenbosch sits at its heart. Wines of South Africa offers a comprehensive overview of what makes the region’s wine estates so exceptional. MERTIA draws on this heritage deliberately and with great care. Each glass becomes part of the evening’s broader story.
Service: dialogue, not performance
One of the most striking things about dining at MERTIA is how the service feels. It is attentive and knowledgeable, but also warm. There is an openness between the kitchen and the dining room. The team does not simply execute a service. They take part in the same experience as the guests.
Marais Kirsten-Uys has worked in some of the world’s most demanding hospitality environments. These include the NoMad Hotel in New York and Dominique Crenn’s restaurants in San Francisco. He brought home to Stellenbosch a firm belief: world-class service should feel effortless and human. It should never feel stiff or ceremonial.
The result is an atmosphere that lets guests be fully present. You can ask questions and engage with the kitchen’s thinking. By the end of the evening, you feel that someone has truly looked after you.
